The Impossible Burger

Lots of very smart people are working very hard to unravel the possibility of a Meatless Burger that tastes so much like actual meat that the standard eater couldn't tell the difference. Once such undertaking is Impossible Foods, a highly invested food startup ($182 million over four rounds) that seems to be rather close to cracking the code. This WSJ article does a great job of telling their history and goals but, more importantly, gives insight into their technique of choosing plant ingredients that interact on a molecular level to recreate that beefy taste.

Personally, I'm excited for these undertakings. If you weren't aware, eating meat is not sustainable, particularly on a global level. Yes, even that small farm, grass fed cow is problematic.

Even if you manage to eschew the morality and sustainability issues of meat, you gotta admit that the ability to create a natural food from plant substitutes that tastes exactly like meat is science worth partaking in.
