Based on what I'm seeing from the demo and the documention I'd say that jQTouch is one of the easiest implementations for mobile development that I've seen in awhile. From a quick glance at the demo code it appears to do a fine job of taking a whole page of markup and manipulating it into one application like environment. It has plenty of standard AJAX functionality as well so it's not all static but, overall, you gotta admit this looks pretty plug-n-play.

Maybe I'll actually get into making a mobile version of some of my sites one day now that this exists.
